Preparation: Wash the lentils. Bring 1 cup of Beluga lentils to a boil with about 3 cups of water and simmer gently for 20-30 minutes over low heat and with the lid on. IMPORTANT: Salt only after cooking! This is how the lenses keep their nice round shape.
