Excellent egg yolk substitute
I use this all the time to make an egg custard for vegan ice creams. It works fantastically in that and in baked goods. I've no idea if it is a substitute for egg yolks, but there are lots of recipes for using it on MyEy's website. In fact, the entire MyEy family of egg substitute products is great.
